I found 2 easy chicken recipes for you Ada:

Brown Sugar and Garlic Chicken

10 cloves of garlic minced

1/4 cup of olive oil

1/4 cup to 1/2 cup of brown sugar

8 boneless skinless chicken breasts

Saute the garlic in the olive until golden, add the brown sugar until it is a slight paste over medium heat.  Remove from heat and spread over chicken breasts placed in a greased glass pan.  Season with salt and pepper. Cook at 500 degrees for 30 minutes.

I sprinkled some extra brown sugar on the top of the chicken but you don’t have to do that extra step.

Artichoke Chicken

prep time: 5 MINS cook time: 25 MINS total time: 30 mins

ingredients:

  • 1 cup bottled Italian dressing
  • 4 skinless, boneless chicken breast halves
  • 1 Tbsp olive oil
  • 1 (15-oz) can artichoke hearts, drained and chopped
  • 3/4 cup grated Parmesan cheese
  • 3/4 cup mayonnaise
  • 1/4 tsp garlic powder

instructions:

  1. Marinate chicken breasts in Italian dressing a few hours to overnight.
  2. Preheat oven to 375ºF.
  3. Heat olive oil in non-stick skillet over medium-high heat. Remove chicken from marinade and cook 2 minutes per side. Place chicken on foil lined baking sheet.
  4. In a medium bowl, mix together chopped artichoke hearts, Parmesan cheese, mayonnaise, and garlic powder. Spread artichoke mixture evenly on top of chicken.
  5. Bake for 20 to 25 minutes, until juices run clear.

Now these are recipes I can get behind! Not too many ingredients and no hour of chopping for this couch potato who still wants good food, and quickly too! Hahaha  I can't wait for my road trip for your fancy meals!  Tee-hee!!

Have you tried this in a crockpot? 

No, I haven't. It cooks so quickly (30 min tops) that there's not much point. It also adds a lot of flavor browning the chicken 1st.

I suppose you could brown the chicken, then throw everything in the crockpot, but the pot is already dirty from browning the chicken - why dirty another?

How was it with the pork? I've never tried it (allergic). It didn't turn out greasy, did it? Most pork has so much fat in it…

Hate when allergies stop you from eating stuff.  unamusedIt worked out great, not greasy at all.  Cut some of the fat out of the pork and sautéed in minimal grease.  Will make it again.  Also worked well with frozen tomatillos.
