I Just must say:  OMG - YOU MUST try these.  They are SO amazingly easy and so very, very, very, very yummy!  If you are "missing" Pillsbury crescent rolls...make these.  I SO WISH I HAD TAKEN A PICTURE...but we ate them all.  I did a post in the original thread, but is was so long, I thought it might get lost for those who hadn't read it.

I made more than the recipe says you should get (it calls for you to get 8) - if you make 8, they will be big, but that is ok.  If you make 10-12, probably more like the size of pillbursy rolls..if you make them too small, they don't get the butter melt in the mouth taste - we made different sizes to see what we like best.  Within 15 minutes of being done - they were gone.

ANYONE can make these - really!

Thanks to those who experimented - here is Jen's version.

1/2 stick butter, room temperature (unsalted butter)
3/4 cup total small curd cottage cheese (2%) and cream cheese (used 1/3 cup of cream cheese pressed into the bottom and then cottage cheese on the top)

1/2 tsp cider vinegar

1 cup gf  flour mix (I used my mix)

1 tsp xanthan

¼ tsp salt

1/4 tsp cream of tartar

1/2  tsp baking soda

1 TBLS of sugar


In the bowl of your mixer combine the butter, cottage cheese/cream cheese mixture until well combined.  Add dry ingredients (I didn't presift them together - just measured and dumped on top of the wet mix).  Mix until a ball of dough forms

Wrap in plastic wrap and chill 2 hours (I did 45 mins in the freezer because I have no patience)

Preheat oven to 350 degrees. On lightly floured piece of parchement paper roll the dough into a 14 inch circle. Cut into 8 triangles (I used my pizza cutter).  

Roll each triangle from wide end to tip, turning ends to form a crescent shape.  Place on a baking sheet lined with parchment and bake until done (depends on size...for just 8, the recipe says 30 mins).

Cool! Thanks for posting your experiment! I hope to take these to my mom and dad's for Christmas. Totally cool to have an alternative to the crescent rolls my brother INSISTS on having at every holiday meal.

Edit:  I almost forgot, does your flour blend already have xanthan gum in it? I almost always use the Wendy Wark's blend -- already has it in there. I usually just add the full amt. called for in the recipe anyway -- since I make up an 8-cup blend of the WW blend, I figure I'm not hurting anything!

Caroline,

My flour mix is just flours - 2 1/2 cups white rice four, 1 cup potato starch, 1 cup tapioca starch, 1/4 cup cornstarch and 1/4 cup of brown rice flour.

I added the 1 tsp of xanthan when making the recipe...I don't think you'll hurt anything by adding the 1 tsp of xanthan.

If you look at the Better Batter flour mix, its basic flours like above - the only added thing in BetterBatter flour mix is pectin.

These really were tasty.  As we have none left, should be interesting to see how they hold up all day - I'm going to make a batch up on Xmas morning to bring to SILs house...I figure I can zap in the microwave if needed.

Cool, thanks! I might start doing a "non xanthan" mix. It always feels a bit "iffy" when I add it to the Wendy Wark. Too much? Not enough?

If this works, a photo of the rolls I took today (on my new camera) - still figuring camera out...file might be too big or I saved it with bad quality too small...we'll see.  Anyway, made a double batch of crescents today....

Thanks mireille - I'm going to have to play with attaching and the new camera too.  I didn't read the book much, but there are so many things.

Now - that table is gorgeous!  I love fancy set tables ...in our family at gatherings..., with so many, its "fancy paper" lol..it suits us fine, mostly, but sometimes, a nice table would be great!

Oh, and I made all the female relatives try a roll...and the verdict was:  great.  My one SIL I think hit it on the head:  just like the pillsbury, but a bit denser. (She liked these better than pillsbury she said because she likes them a bit heavier - other SIL made the pillsbury ones!)...

Mereille, it took me a bit to get the right shape...first time, I made them too small too...

Here is what I did (for one batch of dough) - really, you need to make a pizza crust size and then cut into 8 like a pizza:

Take a big piece of parchment paper.  Get a 14" round pizza pan...trace it on the parchment paper.  Turn paper over (so don't get the pencil onto the dough, but you can still see it).  Roll out dough so that its even and round (go past the pencil edges)...then, cut to a nice circle right near the penciled line...Save the extra...

Then, take a pizza cutter (or knife) and slice like you would for 8 pieces of pizza...roll from fat end to thin end (middle of pizza).  And, you have the shape really.  You'll have about enough to make 2 extra ones (at least I did) with the dough you cut off (depends on how thick you cut)...

When you move to the baking sheet, make sure the edge is tucked under (or it'll lift a bit). 

For a double batch, I got 19 of them total...8 from each round and then the extra dough made three more.  The extra ones were harder to do, as I couldn't do the circle method, but still ok.

Not sure if I explained that correctly....For the double batch, I used 1/2 cup of cream cheese pressed into a measuring cup and then 1 cup of 2% cottage cheese, 1 stick of (unsalted) butter and then double the other ingredients I used...

I've shrunk the picture and saved it as a gif, so that it might be more easily viewable by others...And here, are some photos of Vicky from yesterday and today....You can see the new bean bag chair (present from grandma) and Vicky there is eating an Envirokids cereal bar...the other photo is just too funny.

Jen, One last question! ;-)

I see you add 1 TBS sugar to your recipe -- did you notice a significant difference in the sweetness (from the original recipe)?  I know regular Pillsbury crescents do have a "slight" sweet taste (IMO), but do you notice that in this recipe? I'm going to make some to take to my in-laws this weekend, and I was just curious about the sweetness....

I don't know, lol...I never made the original version - just the modified one I posted.  I don't detect ANY sweetness at all in these and neither does anyone else.  And, Kevin would note...

I do note sweetness in bread products if its there at all  - and I don't like it alot - for example - my cornmuffin recipe uses about 1/2 the amount of sugar I see in most cornmuffin recipes because I don't like the sweet taste...But, in these crescent rolls, you don't taste any sweet at all - I mostly note a buttery taste, honestly.

Cool -- I guess I was wondering why you thought to add it to the original recipe... like, it was similar to something you already made,etc.

I actually just had the pillsbury ones at Christmas (I'm not a celiac) and wanted to make these for Katie, but ran out of time. She was just as happy with the chebe rolls, but your photos are AWESOME! ;-)

I'm with you on the cornbread -- just a hint of sweet is enough for me.

Jen -

I am interested in trying these, but on my screen it shows a question mark next to the salt amount: ? tsp salt.

So how much salt? I would guess 1/4 or 1/2 tsp.
