According to Julius Cesar's "Civil War" and Plutarch's "Life of Pompey" he died stabbed in Egypt the day after his birthday.

Plutarch unfortunately gives two dates, though.

Can you give me a reference for De Bellum Civile, because I'm not sure it's mentioned.

I have Plutarch, Life of Pompey, 79, in front of me and I see no second date.

For the "Civil War", I don't have the reference at home, but I will check soon. I think there is a precise indication of the date of the murder of Pompey. Otherwise...
