Then why are Republicans and DT fighting so hard to deny or stop vote by mail?

Because the Democrats suggested it?  I don’t know. Historically mail in votes break for Republicans while the Democrats have been better at turning out the physical vote.

Undoubtedly because Democrats support it.

We have had mail in voting for a long time now. They can also be taken to a locked box in a designated place (ie county library) if a person wished to vote.

Controversy sells.
I think different states have different rules. We have a panel that sits in a room checking and rechecking signatures before approving them. I changed from.PO box to home address this year via email. Got a nice call to let me know it worked. Of course, I have been a property owner and resident for 25 years in the same place.

It's really not new, we see this every election and every time a legislative body tries to alter voting laws.  We've voted by mail for 25 years.  The worst problems with voting here in Arizona have always occurred with in person voting.  We had a group of blacks show up at some polling places with guns; two years in a row long lines have caused extreme issues, closing or moving of polling places always create confusion.  But every voting cycle, ballots are mailed out, ballots are mailed in, counted and and issues are usually minimal, if any.
