I rarely eat restaurant food. They do not make it all from scratch. I do.

No, they use shortcuts except in the more expensive places.

Too bad.
When I was growing up we had our choce if 2 take out only places. We would call an order in and pick it up. If we arrived early they had a window where we could watch our food being cooked. I miss that kind of food.

I miss it too.  A few places still cook everything fresh.

We had a lot of Cantonese chefs. Now, I don't see any advertised.

Did they all move to another city?  Why?

I think they died and the next generation wasn't interested.

Running a restaurant is grueling work.  I just read that one of our landmark, oldest restaurants is going to close if it can’t fully open in June.  They can’t make it on take out only.  The state is now intentionally shutting down businesses because they know what keeping them closed is doing.

I know it is hard. A relative ran the best restsurant here with a view to die for. He was famous for his pies. He baked pies for a soup kitchen on holidays. His family wasn't interested in running it so it was closed. His family included his pumpkin pie recipe with his obit.
