I know, pepper can get very hot. They should let people season things the way they want to, both salt and pepper should be optional.

I totally agree. Same for garlic asnd onions. I went thru a time when I loved cayenne in a lot of my food. Not everyone did, lol.

That is why I rarely buy mixed herbs.

Same with me except for my poultry seasoning which took a lot if trial and error to find. Just herbs and nithing else.

I tend to use either a blend I make myself or single herbs.

For all food or just meat or poultry? I don't eat meat and it would take time to make it just for one chicken now and then or chicjen bone soup.

It depends.  Mostly chicken. I don’t think I season other meat. I don’t cook that much meat anyway.
