4 cans of whole stewed tomatoes- 32 ounce cans.
1 small can tomato paste
8 ounce package of fresh mushrooms, sliced
1 lb pork sausage (ground beef can be substitited)
1 medium onion, chopped
2 teaspoons pre-chopped garlic, or one clove
1 bell pepper, chopped
basil, rosemarry, and any other italian seasoning you want. I suggest fresh rosemarry, personally
1 sage leaf
1 cup merlot wine (don't worry, the alcohol will evaporate
start with 3 of the cans of tomato- place in food processor or blender. Place in large pot, low, on stovetop. Add herbs, onion, mushrooms, garlic, bell pepper,paste and wine.
Brown meat, add to mixture.
Once everything is added, evaluate sauce, add 4th can if desired.
Simmer for at least 3 hours on low heat, uncovered
