an idea for what to do with left over sweet potatos from your holiday feast:

1 stick margarine, (4 ounces)
2 cups sweet potatoes, mashed
2 cups sugar
1 small can evaporated milk
2 pie crusts, unbaked
1 teaspoon vanilla
3 eggs
1 1/2 teaspoons cinnamon
Mix potatoes, sugar and margarine well. Add other ingredients and mix well. Pour into crusts. Bake 1 hour at 350 degrees.
Makes 2 pies.

Very good... except..

You have to make your own pie crusts
:-)

so do I and I have taught my daughter how to do that as well---
thanks Hon, I'm glad you liked this--I been working pretty good at this thread on recipes and posted a lot of good stuff for the up-coming holiday---the satisfaction I'll have is sitting back and hearing the contented belch in delphi :)
