My aunt's family has 2 trees in her yard full of persimmons, and has decided to share the bounty with my own family. Does anyone know any good recipes for them? Both apple and the soft type(forget the name of that one)

DO I have a good one for you - I got this ut of Mother Earth Mag.
Persimmon Pudding
1 cup persimmon pulp (make sure they are very very ripe)
1 beaten egg
1 1/4 c white sugar
1 c flour
1 1/4 c milk
1/4 tsp baking soda
1 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp salt
1/4 c melted butter

oven 350, buttred 9x13 baking pan
throw everything together and beat until smooth - it may take awhile and the consistancy before baking is reminicient of snot. No worries, you are doing it right. Pour it into the dish and bake for about 30 minutes or until a knife comes out clean. We have added crushed pecans on the top, but don't put it into a pastry crust, the flavor of the persimmon is to fragile and will change.
