So……my son who has moved to CO has a roommate with an insta pot! The main thing his roommates makes in it is rice.
DS is asking what else do my friends like to make in theirs? I don’t have one, so I am coming to you guys…. Who has one? What do you really like to make in it?

I love my insta pot. My favorite is any kind of stew, or lots of chicken dishes. I use mine for rice too....perfect every time. If you look on Pinterest for Instapot recipes there are tons of really good ones.

baked potatoes! Cook up a mess of them and keep them in the fridge for later reheating in the microwave.
Like Suze said .... **hard cooked eggs**! They are Da Bomb! The Insta Pot steams them so there is a little gap between the shell and the egg ... the shell just slides right off!
Rice, as you mentioned, is also good. Cook a messload and refrigerate the rest for later reheating.
Those are just the 3 main things that come to mind. Mr. Pirate uses our Instant Pot for tons of stuff ... recipes are all over the internet.

I had to go Google that one. Hadn’t heard of an Insta Pot.
They look pretty special.

Ohhhhh…. He likes baked potatoes! I will tell him those are recommended!
I think he was asking what people like to cook in it so he finds successes. He is finding recipes online! But this gives him places to start.

I have a little countertop egg cooker (steamer) that I use to make "boiled" eggs. Cooks 7 at a time. Perfect every time, and indeed, very easy to peel them after they have had the steam treatment! You can even use it to cook poached eggs and a small omelet-type thing. But you would need a bigger cooker if cooking for more than one. I use it more for boiled eggs than anything else.

INSTAPOT CHILI
A good recipe. A one pot meal and readily available ingredients .... quick and easy. Serves 4
Ingredients
1 lb ground beef or substitute 14 oz.can of red beans
1 cup of frozen chopped seasoning mix (onions, bell pepper, celery)
Chopped garlic to taste; I use 2 tsps.
1 envelope of dry chili mix
1 14 oz can of Rotel diced tomatoes, your preference mild or hot.
1 med. can tomato sauce
Brown ground beef on the Saute setting of the Instapot. Add seasoning mix and garlic and continue to medium saute until onions are translucent, stirring often. Then add the Rotel, tomato sauce, and the dry chili mix. Stir well and taste and season with salt or pepper as needed. If it seems to taste bitter, I add a tsp of sugar to cut it. Set temperature to low. Use the glass cover, not the pressure top. Follow the recipe on the envelope of the dry mix or cook for about 20-30 minutes. You can make this in a regular pot on the stovetop as well. Serve with tortilla chips, sour cream, raw chopped onion, shredded cheddar cheese and other toppings you like. Enjoy.
