Heres a new recipe I just invented.
Chicken thighs in tomatoes and zucchini, with mushrooms and herbs.
Its an off the hoof recipe so I will just relate it as I cooked it.
Brown two chicken thighs in a two tablespoons of oil.
Remove from pan.
Brown a finely chopped red onion.
Add a teaspoon of crushed garlic and brown some more.
Add sliced button mushrooms and sliced zucchini and brown some more.
Add half a 16oz can of crushed tomatoes and simmer for a few.
Finally add a 1/4 teaspoon each of dried Oregano and Thyme. Mix well.
Return the chicken thighs to the pan.
Add a cup of water. Bring to the boil, put the lid on and oven bake for 1 hr 30 mins.
Cooking time is experimental at this stage. Will report back later.
Plan to serve with leftover scalloped potatoes.
