Potatoes Rancheros Casserole

Serves: 5

1/2 pound lean ground beef
1 package (4.9 ounces) Betty Crocker® au gratin potatoes
2 1/4 cups boiling water
2/3 cup milk
1 cup shredded taco-seasoned or Cheddar cheese (4 ounces)
1 cup coarsely crushed tortilla chips

Heat oven to 400ºF.
Cook beef in 10-inch skillet over medium heat 8 to 10 minutes, stirring
occasionally, until brown; drain. Stir together Potatoes, Sauce Mix,
boiling
water and milk in ungreased 2-quart casserole. Stir in beef and 1/2 cup
of
the cheese.
Bake uncovered about 30 minutes or until top is light golden brown.
Sprinkle
chips over casserole; sprinkle remaining cheese over chips. Bake 3 to 5
minutes longer or until cheese is melted. Let stand 2 minutes before
serving

Roasted Ratatouille

1 small eggplant, ends and trimmed peeled, and cut into 1/2-inch dice
1 small yellow onion, diced
1 small red bell pepper,seeded and cut into 1/2-inch dice
2 garlic cloves, minced
2 tablespoons olive oil
salt and freshly ground black pepper
2 small zucchini, ends trimmed and cut into 1/2 inch thick rounds
4 ripe plum tomatoes, chopped or one 14.5 can, drained and chopped
2 teaspoon minced fresh thyme leaves or 1 teaspoon dried
3 tablespoon basil pesto
1 tablespon chopped fresh parsley leaves

1. Preheat the oven to 425 degrees F. Lightly oil a large roasting pan

2. Add the eggplant, onion, bell pepper, and garlic to the pan drizzle
with the oil, and season with salt and pepper to taste. Toss to combine.
Cover and roast until the vegetables are slightly softened about 20
minutes.

3. Remove the pan from the oven, add the zucchini, tomatoes, and thyme,
and toss gentle. Roast, uncovered, until the vegetable are tender, about
20 minutes longer.

4. Stir in the pesto. sprinkle with the parsley, and serve hot

Meatloaf

I'll try to make it simple, since i don't have exact measures either! you use your regular recipe for meatloaf. But use enchilada sauce fer the topping. Add can of chopped green Chiles, Umin powder or taco seasoning, also can of pinto beans (homemade or refried) it works too. Serve with flour tortillas and Spanish rice. Kids love it and makes a full course meal! OH don't forget to top with cheddar cheese or any of the Mexican cheeses! Hope u at least get the idea! Kids love it also good the next day as leftovers! I have also spread out the meat mixture,spread green chilies,refried beans,cheese and rolled like a jelly role. Add topping and more cheese on top!

This is so good and easy.One of our favorites.

 

Easy Chicken Enchiladas


3 cups shredded Cheddar cheese, divided
2 cups shredded Monterey Jack cheese
2 cups chopped cooked chicken
2 cups sour cream
1 (10.75 ounce) can condensed cream of chicken soup, undiluted
1 (4 ounce) can chopped green chilies
2 tablespoons finely chopped onion
1/4 teaspoon pepper
1/8 teaspoon salt
10 (8 inch) flour tortillas, warmed

In a large bowl, combine 2 cups cheddar cheese, Monterey Jack cheese, chicken, sour cream, soup, chilies, onion, pepper and salt.

Spoon about 1/2 cup off center on each tortilla; roll up. Place seam side down in a greased 13-in. x 9-in. x 2-in. baking dish.

 
Cover and bake at 350 degrees F for 20 minutes.

Uncover; sprinkle with remaining cheddar cheese. Bake 5 minutes longer or until cheese is melted.

Let stand for 10 minutes before serving.

I made this for supper last night. It was in the insert in our newspaper yesterday.  The only thing I changed was instead of green pepper, I used yellow peppers.

Smothered Steaks and Bell Peppers

4 beef cube steaks
1/2 tsp seasoning salt
1/2 tsp coarse ground black pepper
2 T. oil
1/2 cup green pepper, sliced
1/2 cup red pepper, sliced
1 small onion, sliced
2 T. flour
1/3 cup soya sauce
1 cup water

Sprinkle steaks with seasonings. Brown in hot oil over med-hi heat for about 3 minnutes on each side, remove and keep warm.

Saute onions and peppers. Blend together soya sauce, water and flour. Pour over peppers and onions. Cook and stir till sauce is thickened. Spoon over steaks and serve with rice.
Sprinkle with parsley if desired.

Amish Sticky Chicken Recipe

 

1 chicken cut up
4 tablespoons cooking oil
1/4 cup flour
salt and pepper to taste
butter

Pour about 2 tablespoons oil into skillet. Add a tablespoon of butter if desired. Heat until oil is hot. Coat chicken pieces with flour. Place in hot skillet, sprinkle salt and pepper on pieces and brown on all sides. Remove and place in a 2-quart casserole dish. Do this until all pieces are browned. Rinse skillet with about 1/4 to 1/2 cup water and add to chicken. Place dish, covered into oven at 350 degrees. Bake for 45 minutes to 1 hour. When chicken is done, use drippings to make gravy.

Here's a quick one dish dinner to make during those hetic holiday rush days.

             BRUSCHETTA CHICKEN BAKE

1 can (14 1/2 oz) diced tomatoes undrained

1/2 cup of water

1 1/2 lbs. boneless chicken breast cut into bite size pieces (skinless)

1 tsp. dried basil leaves

1 cup shredded mozzerella cheese

 

Preheat oven 400 degrees. Place tomatoes in medium bowl. Add stuffing mix and water, stir until stuffing is moistened. Set aside. In a 13 x9 baking dish place chicken bites and sprinkle with basil, cover with cheese. Top with stuffing mix. Bake for 30 min. or until chicken is done.

Chicken with rice and oats stuffing

1 cup oats
1 cup uncooked rice
1/2 cup chopped celery
1/4 cup finely chopped onion
1 can condensed mushroom soup
1 1/2 cups water
1 tsp salt
1/4 tsp pepper
1/2 tsp poultry seasoning
6 chicken breasts
3 tbsp melted marg or butter
1/2 tsp salt
1 tsp paprika
Combine first 9 ingredients. Mix together. Spread in greased 13x9 pan. Top with chicken, (skin side up if you leave the skin on).
Drizzle with melted butter. Sprinkle with salt and paprika.

Bake covered at 375º for 30 minutes. Remove cover and bake an additional 30 minutes or until chicken is tender.

( I use thighs usually and it takes a bit longer. Stir the mixture together after baking and removing chicken from top.)

Swedish Meatballs

2 lbs ground meat (your choice)

1 c corn flakes

1/4 c parsley

2 eggs

1/2 tbl. garlic powder

1/2 tbl. onionminced

Mix all above and form into small meatballs. About the size of a walnut. You can make larger if you wish. Brown

Sauce

2 tbl. soy sauce

1/2 tsp. pepper

1/4 c kethcup

1 can jellied cranberry sauce

1 bottle chilli sauce

In a small sauce pann mix sauce to break down cranberry sauce a little. In a crop pot put meatballs pour sauce over and leave on low during your party. I put a large spoon and small dishes nex to crop pot with toothpicks. I use heavy small paper plates so they can throw them away.
