Now that's something I can't do without, I would need a large planting. I suspect many city folk like me don't really now if they keep for any length of time, like onions, do they store, what do you do with them?
As a kid in Germany and recall having racks of potatoes in the cellar to get us through the winter along with large ceramic jars of sauerkraut, fermenting cabbage in it's juices , packed with layers of salt and spices. Funny how nowadays I order kimchi at Korean restaurants, same thing, just spicier.
