I like the color of the plate. I have always frowned on mono toned plates of food.

What happened to the bushy fur on that squirrel's tail <VBG>? 

Actually, rat is easier for the hawk to eat than tough-hided squirrel.

Exactly what I was thinking. I even enlarged the image to take a fuzzy closer look.  I think you're right.
