Pecan Pralines   The Ravenous You: Food, Glorious Food

2 cups white sugar                                    1/2 teaspoon vanilla
3/4 cup sweet milk                                    1/2 teaspoon soda
1-1/2 tablespoons butter                           1-1/2 cups pecans,  broken into pieces                                                                                                 

Tear off several long pieces of wax paper & place on cabinet top.

Put milk sugar & soda in tall pan. Stir with wooden spoon on medium heat till it starts boiling slightly.  Cook until it forms soft ball in cold water or is 240 degrees on a candy thermometer.

Remove from heat & get ready to work fast.  Add butter, vanilla & pecans.  Beat (using wooden spoon).  Once it feels like it's beginning to harden, quickly spoon out onto pieces of wax paper.

After the pralines have cooled, wrap each one in a small piece of wax paper & place in an air tight container.

Similar to the old time pralines that are sold in New Orleans LA but much creamier & better.
