Any one out their that know of any?

I did a search for images of SoL patterns, and there are a few paper piecing patterns, but they look rather complex.  If it were me, I would look for a fabric with SoL image on it, and fussy cut it for applique.  There are several SoL fabrics available at online shops.  You might try searching at quiltshops.com to find a shop that carries SoL fabric(s).

Here's a good one from equilter.com      https://www.equilter.com/product/277568/we-the-people-symbols-of-democracy-blue

And here's a more "cartoony" version of the SoL - an applique pattern, also from equilter.com    https://www.equilter.com/product/221144/let-freedom-ring-appliqu%C3%A9-pattern-by-quilture
