I have hand pieced an 8 pointed star with two inch pieces. How do I press this to hand quilt? It is 32 inches point to point.

On the pressing; of you want to stitch in the ditch press away from that. If you are doing 1/4 inch echo it does not matter. It you come to a place where there are layers of fabric you can poke needle straight up and down to quilt thru those areas.
