One of the YouTube videos on synchronizing the carbs suggested giving the throttle a little flick between adjustment.  Regardless, with the engine idling, as soon as a twist the throttle even the tiniest bit the engine stalls.

No need to rev when syncing.....it's done at an idle and once it's set.....you're done. Don't believe everything you hear. :)

You've got something messed up in the carbs.....like a plugged pilot jet maybe.

you said you screwed with the PMS. this is not done for the carb sync. set your PMS as stated in the KB https://sites.google.com/site/vstar1100kb/home/tuning/carb-jetting there is a table

then to balance the carbs use the carb sync screw on the bottom of the carbs facing . turn the screw slowly and see where the oil ends up. if it goes up for one side and you want it to go down, turn the screw the other way.
